Instructions
- Combine the chicken breasts, lemon juice, olive oil, and fresh herbs in a slow cooker.
- Season with salt and pepper to taste.
- Pour the chicken broth over the chicken, ensuring everything is submerged.
- Cook on low for 360-420 minutes or high for 180-240 minutes, until the chicken is tender and cooked through.
- Remove the chicken from the slow cooker and add the rice to the broth.
- Stir and continue to cook for an additional 20-30 minutes until the rice is fluffy and cooked through.
- Serve the chicken over the rice, garnished with additional herbs if desired.
