  • 2 lemons (juiced)
  • 1 tablespoon olive oil
  • 2 tablespoons fresh herbs (like thyme and rosemary)
  • 3 cups chicken broth
  • 2 cups rice
  • Salt and pepper to taste

Instructions

  1. Combine the chicken breasts, lemon juice, olive oil, and fresh herbs in a slow cooker.
  2. Season with salt and pepper to taste.
  3. Pour the chicken broth over the chicken, ensuring everything is submerged.
  4. Cook on low for 360-420 minutes or high for 180-240 minutes, until the chicken is tender and cooked through.
  5. Remove the chicken from the slow cooker and add the rice to the broth.
  6. Stir and continue to cook for an additional 20-30 minutes until the rice is fluffy and cooked through.
  7. Serve the chicken over the rice, garnished with additional herbs if desired.
