Description
A simple and flavorful one-pot dish featuring rice, kidney beans, and aromatic vegetables, seasoned with Cajun spices.
Ingredients

- 1 cup long-grain rice
- 2 cups vegetable broth
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 onion, diced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Sauté the onion, bell pepper, and celery over medium heat for about 5 minutes.
- Add the garlic and cook for an additional minute.
- Stir in the kidney beans, rice, vegetable broth, Cajun seasoning, smoked paprika, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes.
- Remove from heat and let sit for 5 minutes before serving.
- Garnish with fresh parsley and enjoy!
Notes
Best eaten fresh the same day, but can be reheated on low heat with a splash of broth. This dish does well in the fridge for 3-4 days.
