Description

A simple and flavorful one-pot dish featuring rice, kidney beans, and aromatic vegetables, seasoned with Cajun spices.


Ingredients

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the onion, bell pepper, and celery over medium heat for about 5 minutes.
  2. Add the garlic and cook for an additional minute.
  3. Stir in the kidney beans, rice, vegetable broth, Cajun seasoning, smoked paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes.
  5. Remove from heat and let sit for 5 minutes before serving.
  6. Garnish with fresh parsley and enjoy!

Notes

Best eaten fresh the same day, but can be reheated on low heat with a splash of broth. This dish does well in the fridge for 3-4 days.
