  • 2 cups fresh spinach
  • 1 cup heavy cream or coconut cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp nutmeg
  • Grated Parmesan cheese (optional, for serving)
  • Olive oil

Instructions

  1. Cook pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced onion and garlic; sauté until translucent.
  4. Add sausage to the skillet, breaking it up until browned.
  5. Stir in the diced butternut squash, salt, pepper, and nutmeg. Cook until tender.
  6. Pour in the heavy cream and stir until combined.
  7. Add spinach and cook until wilted.
  8. Toss the cooked pasta into the skillet, mixing everything together.
