- 1 cup heavy cream or coconut cream
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp nutmeg
- Grated Parmesan cheese (optional, for serving)
- Olive oil
Instructions
- Cook pasta according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add diced onion and garlic; sauté until translucent.
- Add sausage to the skillet, breaking it up until browned.
- Stir in the diced butternut squash, salt, pepper, and nutmeg. Cook until tender.
- Pour in the heavy cream and stir until combined.
- Add spinach and cook until wilted.
- Toss the cooked pasta into the skillet, mixing everything together.
