Ingredients

- 1 lb lean ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 2 cups ready rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 1 cup salsa
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Brown the ground beef in a large skillet over medium heat. Drain excess fat.
- Stir in the taco seasoning and salsa, cooking for another 2-3 minutes.
- Add the black beans, corn, and ready rice to the skillet. Stir to combine and heat through.
- Sprinkle the shredded cheese on top, cover, and let it melt for about 3-5 minutes.
- Season with salt and pepper to taste.
- Garnish with chopped cilantro if desired and serve hot.
Notes
Serve with tortilla chips, fresh avocado, or as a filling in soft tortillas.
