Description

A simple one-pan dish with ground beef, beans, corn, rice, and melty cheese, perfect for quick weeknight dinners.


Ingredients

  • 1 lb lean ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups ready rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 cup salsa
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium heat. Drain excess fat.
  2. Stir in the taco seasoning and salsa, cooking for another 2-3 minutes.
  3. Add the black beans, corn, and ready rice to the skillet. Stir to combine and heat through.
  4. Sprinkle the shredded cheese on top, cover, and let it melt for about 3-5 minutes.
  5. Season with salt and pepper to taste.
  6. Garnish with chopped cilantro if desired and serve hot.

Notes

Serve with tortilla chips, fresh avocado, or as a filling in soft tortillas.
