- 2 cups vegetable broth

- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.
- Add sliced mushrooms and cook until soft, releasing their moisture and enhancing their flavor.
- Pour in vegetable broth and bring to a boil, incorporating the garlic and sautéed mushrooms.
- Add pasta and cook according to package instructions, stirring occasionally to prevent sticking.
- Once the pasta is cooked, stir in fresh spinach until wilted.
- Remove from heat and mix in grated parmesan cheese until melted.
- Season with salt and pepper to taste. Serve warm.
Notes
