One Pot Chicken with White Beans and Tomatoes

Description

A straightforward baked dish featuring tender chicken, creamy beans, and bright tomatoes, perfect for weeknight dinners.


Ingredients

Scale
  • 1 can cannellini beans, drained and rinsed
  • 8 sage leaves, chopped
  • 6 cloves garlic, chopped
  • 1 lemon, zest and juice
  • 2 Tbsp olive oil
  • 250g cherry tomatoes
  • 60g cream cheese
  • 800g chicken drumsticks
  • Salt and pepper to taste
  • Chopped fresh basil leaves for garnish

Instructions

  1. Combine all of the ingredients together in an ovenproof dish and give it a quick stir.
  2. Add the chicken drumsticks on top and season well with salt and pepper.
  3. Bake at 180C fan bake for 20 minutes covered.
  4. Remove the cover and bake for an additional 30 minutes uncovered.
  5. Garnish with chopped fresh basil leaves and serve hot.

Notes

Using fresh ingredients, especially herbs and lemon, enhances the overall taste.
