- 4 chicken breasts
- 4 medium potatoes, diced
- 2 carrots, sliced
- 1 onion, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Season the chicken with salt and pepper and brown on both sides.
- Remove chicken and set aside.
- Add onions and garlic to the same pot; sauté until soft.
- Add carrots and potatoes; stir for a few minutes.
- Pour in the chicken broth and bring to a boil.
- Add the chicken back to the pot along with thyme.
- Reduce heat, cover, and simmer for 25-30 minutes until the chicken is cooked through.
- Stir in the heavy cream before serving.
