One-Pot Irish Chicken

A straightforward and comforting dish cooked entirely in one pot, making cleanup easy and flavors meld beautifully.

Ingredients

  • 4 chicken breasts
  • 4 medium potatoes, diced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season the chicken with salt and pepper and brown on both sides.
  3. Remove chicken and set aside.
  4. Add onions and garlic to the same pot; sauté until soft.
  5. Add carrots and potatoes; stir for a few minutes.
  6. Pour in the chicken broth and bring to a boil.
  7. Add the chicken back to the pot along with thyme.
  8. Reduce heat, cover, and simmer for 25-30 minutes until the chicken is cooked through.
  9. Stir in the heavy cream before serving.

Using fresh ingredients enhances flavor and texture. Browning the chicken adds depth to the dish.
