- 4 boneless, skinless chicken thighs

- Salt and pepper to taste

Instructions
- Heat olive oil over medium heat in a large pot. Season chicken with salt and pepper and add to the pot. Sear chicken on both sides until golden brown, about 5-7 minutes.
- Remove the chicken and set aside. In the same pot, add minced garlic and cook until fragrant, about 30 seconds, ensuring it doesn’t brown.
- Stir in rice, chicken broth, lemon juice, and zest. Bring the mixture to a boil.
- Return chicken to the pot and reduce heat to low. Cover and simmer for about 20-25 minutes, or until rice is cooked and chicken is tender.
