4 boneless, skinless chicken thighs
1 cup rice (white or brown)
2 cups chicken broth
1 lemon (juice and zest)
2 garlic cloves (minced)
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley (for garnish)
Instructions
Heat olive oil over medium heat in a large pot. Season chicken with salt and pepper and add to the pot. Sear chicken on both sides until golden brown, about 5-7 minutes.
Remove the chicken and set aside. In the same pot, add minced garlic and cook until fragrant, about 30 seconds, ensuring it doesn’t brown.
Stir in rice, chicken broth, lemon juice, and zest. Bring the mixture to a boil.
Return chicken to the pot and reduce heat to low. Cover and simmer for about 20-25 minutes, or until rice is cooked and chicken is tender.
