Ingredients

- 1 pound red beans
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 1 smoked sausage, sliced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 bay leaf
- 4 cups chicken broth
- 2 cups cooked rice
- Salt and pepper to taste
- Green onions, for garnish
Instructions
- Rinse and soak the red beans overnight. Drain before cooking.
- Sauté the onion, bell pepper, celery, and garlic until softened.
- Add the sliced sausage and cook until browned.
- Stir in the beans, thyme, paprika, bay leaf, and broth.
- Bring to a boil, then reduce heat and simmer for about 90-120 minutes, or until beans are tender.
- Season with salt and pepper to taste.
- Serve over cooked rice and garnish with green onions.
Notes
Soaking the beans overnight enhances their flavor and texture. Pair with cornbread for a perfect meal.
