Description

A hearty dish of tender red beans combined with smoked sausage, served over rice, perfect for family meals.


Ingredients

  • 1 pound red beans
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 smoked sausage, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 bay leaf
  • 4 cups chicken broth
  • 2 cups cooked rice
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions

  1. Rinse and soak the red beans overnight. Drain before cooking.
  2. Sauté the onion, bell pepper, celery, and garlic until softened.
  3. Add the sliced sausage and cook until browned.
  4. Stir in the beans, thyme, paprika, bay leaf, and broth.
  5. Bring to a boil, then reduce heat and simmer for about 90-120 minutes, or until beans are tender.
  6. Season with salt and pepper to taste.
  7. Serve over cooked rice and garnish with green onions.

Notes

Soaking the beans overnight enhances their flavor and texture. Pair with cornbread for a perfect meal.
