- 1 pound ground beef or turkey
- 1 cup orzo pasta
- 1 can (15 oz) white beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and garlic; sauté until softened and fragrant.
- Mix the ground meat with salt, pepper, and dried herbs. Form into small meatballs.
- Add meatballs to the pot; brown on all sides, about 5 minutes.
- Stir in carrots and celery; cook for a few minutes, allowing them to soften.
- Pour in the broth and add tomatoes. Bring to a boil.
- Reduce heat, and add the orzo and white beans. Simmer for about 15-20 minutes, or until the orzo is cooked al dente.
- Adjust seasoning and serve hot, garnishing with fresh herbs if desired.
Notes
Ensure your pot is large enough for even browning of meatballs and avoid overcooking the orzo.
