Description

A comforting meatball stew that combines protein-rich meatballs, tender orzo pasta, and hearty white beans.


Ingredients

  • 1 pound ground beef or turkey
  • 1 cup orzo pasta
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic; sauté until softened and fragrant.
  2. Mix the ground meat with salt, pepper, and dried herbs. Form into small meatballs.
  3. Add meatballs to the pot; brown on all sides, about 5 minutes.
  4. Stir in carrots and celery; cook for a few minutes, allowing them to soften.
  5. Pour in the broth and add tomatoes. Bring to a boil.
  6. Reduce heat, and add the orzo and white beans. Simmer for about 15-20 minutes, or until the orzo is cooked al dente.
  7. Adjust seasoning and serve hot, garnishing with fresh herbs if desired.

Notes

Ensure your pot is large enough for even browning of meatballs and avoid overcooking the orzo.
