Ingredients

  • 1 cup red beans (canned or soaked and boiled)
  • 1 cup long-grain rice
  • 1 sausage (Andouille or your choice), sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, heat a little oil over medium heat. Sauté the chopped onion, green bell pepper, and garlic until the onion is translucent, about 5 minutes.
  2. Add the sliced sausage and cook until browned, about 5-7 minutes.
  3. Stir in the red beans, chicken broth, cumin, paprika, salt, and pepper. Bring to a simmer and let the flavors blend for about 5 minutes.
  4. Add the rice, cover, and cook for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Fluff with a fork, garnish with green onions, and serve.

Notes

This dish is best enjoyed fresh, but it can be made ahead of time and reheated with a bit of broth to retain moisture.
