- 1 cup red beans (canned or soaked and boiled)
- 1 cup long-grain rice
- 1 sausage (Andouille or your choice), sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, heat a little oil over medium heat. Sauté the chopped onion, green bell pepper, and garlic until the onion is translucent, about 5 minutes.
- Add the sliced sausage and cook until browned, about 5-7 minutes.
- Stir in the red beans, chicken broth, cumin, paprika, salt, and pepper. Bring to a simmer and let the flavors blend for about 5 minutes.
- Add the rice, cover, and cook for about 20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff with a fork, garnish with green onions, and serve.
Notes
This dish is best enjoyed fresh, but it can be made ahead of time and reheated with a bit of broth to retain moisture.
