- 1 pound red beans
- 1/2 pound Andouille sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 2 bay leaves
- 4 cups chicken broth
- 4 cups long-grain rice
- Salt and pepper to taste
- Green onions, for garnish
Instructions
- Rinse and soak the red beans overnight in water. Drain before use.
- Cook the sliced Andouille sausage over medium heat until browned. Remove sausage and set aside.
- Add the chopped onion, bell pepper, celery, and garlic to the pot. Sauté until vegetables are tender.
- Add the soaked red beans, thyme, paprika, cayenne pepper, bay leaves, and chicken broth. Bring to a boil.
- Reduce heat and simmer for 1.5 to 2 hours, or until beans are tender. Add the sausage back to the pot.
- Cook the rice according to package instructions.
- Serve the beans over rice and garnish with chopped green onions.
Notes
The flavors deepen the next day, making for an even better dish. Serve with cornbread for a perfect pairing.
