- 1 cup heavy cream

Instructions
- Heat a drizzle of olive oil in a large pot over medium heat. Add the Italian sausage, breaking it apart as it cooks until browned and crispy, about 5-7 minutes.
- Stir in the chopped onion and minced garlic. Cook until the onion is translucent and fragrant, about 3-4 minutes.
- Pour in the chicken broth and diced tomatoes, bringing the mixture to a gentle simmer.
- Add the cheese tortellini and cook according to package instructions, generally about 5-7 minutes, until the pasta is tender.
- Stir in the heavy cream and spinach, allowing everything to heat through and the spinach to wilt, about 2-3 minutes.
Notes
Brown the sausage well for deeper flavor. Avoid overcooking the tortellini.
