  • 1 onion, chopped

  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups cheese tortellini
  • 1 cup heavy cream
  • 1 cup spinach
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat. Add the Italian sausage, breaking it apart as it cooks until browned and crispy, about 5-7 minutes.
  2. Stir in the chopped onion and minced garlic. Cook until the onion is translucent and fragrant, about 3-4 minutes.
  3. Pour in the chicken broth and diced tomatoes, bringing the mixture to a gentle simmer.
  4. Add the cheese tortellini and cook according to package instructions, generally about 5-7 minutes, until the pasta is tender.
  5. Stir in the heavy cream and spinach, allowing everything to heat through and the spinach to wilt, about 2-3 minutes.

Notes
