- 4 Chicken breasts
- 1 lb Baby potatoes
- 1/2 cup Balsamic vinegar
- 1/4 cup Honey
- 2 tbsp Lemon juice
- 3 cloves Garlic, minced
- 1 tbsp Fresh herbs (such as rosemary or thyme)
- 1 tsp Salt
- 1/2 tsp Pepper
- 2 tbsp Olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Whisk together balsamic vinegar, honey, lemon juice, garlic, herbs, salt, pepper, and olive oil.
- Place the chicken and potatoes in a bowl, and pour the marinade over them. Toss to coat well.
- Marinate for 30 minutes or refrigerate overnight.
- Spread the marinated chicken and potatoes on a sheet pan in a single layer.
- Bake for 25-30 minutes, until the chicken is cooked through and potatoes are tender.
- Serve hot and enjoy your meal!

For added flavor, marinate overnight for best results. Ensure the chicken reaches an internal temperature of 165°F (74°C).
