Description

A flavorful and satisfying meal that combines chicken breasts and baby potatoes, marinated in a zesty balsamic mixture.


Ingredients

  • 4 Chicken breasts
  • 1 lb Baby potatoes
  • 1/2 cup Balsamic vinegar
  • 1/4 cup Honey
  • 2 tbsp Lemon juice
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh herbs (such as rosemary or thyme)
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 tbsp Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together balsamic vinegar, honey, lemon juice, garlic, herbs, salt, pepper, and olive oil.
  3. Place the chicken and potatoes in a bowl, and pour the marinade over them. Toss to coat well.
  4. Marinate for 30 minutes or refrigerate overnight.
  5. Spread the marinated chicken and potatoes on a sheet pan in a single layer.
  6. Bake for 25-30 minutes, until the chicken is cooked through and potatoes are tender.
  7. Serve hot and enjoy your meal!

Notes

For added flavor, marinate overnight for best results. Ensure the chicken reaches an internal temperature of 165°F (74°C).
