Description
A hearty dish of red beans slow-cooked with smoked sausage, vegetables, and spices, served over rice.
Ingredients

- 1 pound dried red beans
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 pound smoked sausage, sliced
- 4 cups chicken broth
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- 3 cups cooked white rice
- Chopped green onions for garnish
Instructions
- Rinse and soak the red beans overnight in water.
- Combine the soaked red beans, onion, bell pepper, celery, garlic, sausage, chicken broth, and Cajun seasoning in a slow cooker.
- Cover and cook on low for 6-8 hours or until the beans are tender.
- Season with salt and pepper to taste.
- Serve the beans over cooked white rice and garnish with chopped green onions.
Notes
Gets better overnight; reheats with a splash of broth. Best eaten fresh the same day.
