Description

A hearty dish of red beans slow-cooked with smoked sausage, vegetables, and spices, served over rice.


Ingredients

  • 1 pound dried red beans
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 pound smoked sausage, sliced
  • 4 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • 3 cups cooked white rice
  • Chopped green onions for garnish

Instructions

  1. Rinse and soak the red beans overnight in water.
  2. Combine the soaked red beans, onion, bell pepper, celery, garlic, sausage, chicken broth, and Cajun seasoning in a slow cooker.
  3. Cover and cook on low for 6-8 hours or until the beans are tender.
  4. Season with salt and pepper to taste.
  5. Serve the beans over cooked white rice and garnish with chopped green onions.

Notes

Gets better overnight; reheats with a splash of broth. Best eaten fresh the same day.
