Ingredients

  • 1 lb chicken breast, diced
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cups chicken broth
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • 1 cup corn (optional)
  • Chopped green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat until it shimmers.
  2. Add onions and garlic; sauté until soft and aromatic, about 3-5 minutes.
  3. Stir in the diced chicken and cook until browned, about 5-7 minutes.
  4. Add andouille sausage, shrimp, and Cajun seasoning; cook for an additional 3-4 minutes, letting the spices toast slightly.
  5. Pour in chicken broth and add the white beans and corn if using.
  6. Bring to a simmer, and cook for about 20 minutes to meld the flavors.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped green onions for a fresh finish.

Notes

For a lighter alternative, substitute chicken breast with turkey or tofu. Customize the proteins to your dietary preferences.
