Description

A hearty and quick pasta dish with sausage, fresh spinach, and tomatoes, ready in under 30 minutes.

Ingredients

Scale
  • 8 oz pasta of choice
  • 1 tbsp olive oil
  • 1 lb sausage (Italian or your choice)
  • 2 cups fresh spinach
  • 1 can (14.5 oz) diced tomatoes
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside, ensuring the pasta is al dente for the best texture.
  2. Heat olive oil in a large skillet over medium heat until it glistens. Add sausage and cook until browned, about 5-7 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in the diced tomatoes and spinach, cooking until the spinach has wilted, about 2-3 minutes.
  5. Toss the cooked pasta into the skillet and mix well, ensuring everything is evenly coated. Season with salt and pepper to taste.
  6. Serve with grated Parmesan cheese if desired.

Notes

For a lighter option, swap the sausage for turkey or chicken sausage. Serve with garlic bread or a fresh side salad for a complete meal.
