Description

A flavorful stovetop dish featuring chicken breasts cooked in a creamy sauce with sun-dried tomatoes and spinach.


Ingredients

  • 2 large boneless, skinless chicken breasts (1 1/2 to 2 pounds total)
  • 1 1/2 teaspoons kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper
  • 2 to 3 tablespoons olive oil, divided
  • 1 small yellow onion, diced (about 2/3 cup)
  • 3 cloves garlic, minced
  • 1/2 cup drained oil-packed sun-dried tomatoes (2 1/2 ounces), thinly sliced
  • 2 teaspoons dried Italian seasoning
  • 5 ounces baby spinach (about 5 packed cups)
  • 1 ounce Parmesan cheese (1/2 cup firmly packed freshly grated or 1/3 cup store-bought grated)
  • 1 1/4 cups heavy cream

Instructions

  1. Cut the chicken breasts in half horizontally and season with 1 teaspoon kosher salt and pepper.
  2. Heat 1 to 2 tablespoons of olive oil in a skillet over medium-high heat. Sear half of the chicken until browned on both sides, about 5-6 minutes. Set aside.
  3. Repeat with the remaining chicken, adjusting the heat as necessary to maintain the pan’s temperature.
  4. Reduce heat to medium and add more olive oil if needed. Cook the diced onion until softened and glossy, about 3-4 minutes.
  5. Add the minced garlic, sun-dried tomatoes, and Italian seasoning. Cook until fragrant, about 1-2 more minutes.
  6. Gradually add the spinach a handful at a time, allowing it to wilt between additions.
  7. Stir in the Parmesan cheese, heavy cream, and remaining 1/2 teaspoon salt. Simmer gently until the sauce thickens and becomes creamy.
  8. Return the chicken to the skillet, coating it with the sauce, and cook until the thickest part of the chicken reaches an internal temperature of 165°F, about another 5-7 minutes.
  9. Serve hot with the sauce spooned over the chicken.
