- 2 large boneless, skinless chicken breasts (1 1/2 to 2 pounds total)
- 1 1/2 teaspoons kosher salt, divided
- 1/2 teaspoon freshly ground black pepper
- 2 to 3 tablespoons olive oil, divided
- 1 small yellow onion, diced (about 2/3 cup)
- 3 cloves garlic, minced
- 1/2 cup drained oil-packed sun-dried tomatoes (2 1/2 ounces), thinly sliced
- 2 teaspoons dried Italian seasoning
- 5 ounces baby spinach (about 5 packed cups)
- 1 ounce Parmesan cheese (1/2 cup firmly packed freshly grated or 1/3 cup store-bought grated)
- 1 1/4 cups heavy cream
Instructions
- Cut the chicken breasts in half horizontally and season with 1 teaspoon kosher salt and pepper.
- Heat 1 to 2 tablespoons of olive oil in a skillet over medium-high heat. Sear half of the chicken until browned on both sides, about 5-6 minutes. Set aside.
- Repeat with the remaining chicken, adjusting the heat as necessary to maintain the pan’s temperature.
- Reduce heat to medium and add more olive oil if needed. Cook the diced onion until softened and glossy, about 3-4 minutes.
- Add the minced garlic, sun-dried tomatoes, and Italian seasoning. Cook until fragrant, about 1-2 more minutes.
- Gradually add the spinach a handful at a time, allowing it to wilt between additions.
- Stir in the Parmesan cheese, heavy cream, and remaining 1/2 teaspoon salt. Simmer gently until the sauce thickens and becomes creamy.
- Return the chicken to the skillet, coating it with the sauce, and cook until the thickest part of the chicken reaches an internal temperature of 165°F, about another 5-7 minutes.
- Serve hot with the sauce spooned over the chicken.
