Ingredients

  • 1 cup dried red beans
  • 4 cups water
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups cooked rice
  • Chopped green onions for garnish

Instructions

  1. Rinse the red beans and soak them in water overnight.
  2. Combine the soaked beans and 4 cups of fresh water in a large pot, bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Sauté onion, bell pepper, celery, and garlic in a separate skillet until soft.
  4. Add the sautéed vegetables to the pot with the beans.
  5. Stir in Cajun seasoning, bay leaf, salt, and pepper.
  6. Continue to simmer for about 1 to 1.5 hours, or until the beans are tender.
  7. Serve the red beans over cooked rice and garnish with chopped green onions.

Allowing beans to soak overnight is crucial for achieving tenderness. They reheat well and flavors deepen overnight.
