- 1 cup dried red beans
- 4 cups water
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 bay leaf
- Salt and pepper to taste
- 2 cups cooked rice
- Chopped green onions for garnish
Instructions
- Rinse the red beans and soak them in water overnight.
- Combine the soaked beans and 4 cups of fresh water in a large pot, bring to a boil, then reduce heat and simmer for 30 minutes.
- Sauté onion, bell pepper, celery, and garlic in a separate skillet until soft.
- Add the sautéed vegetables to the pot with the beans.
- Stir in Cajun seasoning, bay leaf, salt, and pepper.
- Continue to simmer for about 1 to 1.5 hours, or until the beans are tender.
- Serve the red beans over cooked rice and garnish with chopped green onions.
