BBQ Chicken Sweet Potato Skillet

A satisfying one-pan dish that combines tender sweet potatoes, shredded chicken, and zesty BBQ sauce, perfect for busy weeknights.

  • 2 medium sweet potatoes, diced
  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 red onion, sliced
  • 1 cup corn, frozen or fresh
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon smoked paprika
  • 2 green onions, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add diced sweet potatoes, seasoning with salt, black pepper, and smoked paprika. Cook for about 10 minutes, stirring occasionally, until they soften and start to brown.
  3. Add sliced red onion and corn to the skillet, stirring well to combine. Continue to sauté for another 5 minutes.
  4. Add shredded chicken and BBQ sauce, mixing thoroughly to coat the ingredients. Cook for another 5 minutes until the mixture simmers.
  5. Sprinkle the shredded cheddar cheese evenly over the skillet. Cover and cook for an additional 2-3 minutes until the cheese melts.

Notes

Top with chopped green onions for added freshness. Pair with a green salad or serve with crusty bread.
