Description

A simple yet satisfying dish made by cooking tender chicken and cubed potatoes in a slow cooker, creating a comforting and hearty meal.


Ingredients

  • 1 lb chicken breasts
  • 5 medium-sized potatoes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (just enough to cover chicken)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Wash the potatoes and cut them into small cubes.
  2. Spray a crockpot with cooking spray to prevent sticking.
  3. Add the potatoes to the crockpot, then season them with olive oil, salt, pepper, garlic powder, and paprika.
  4. Add the minced garlic and stir everything well to combine the flavors evenly.
  5. Cut the chicken into cubes and season it with 1/2 tsp each of salt and pepper, plus 1 tsp each of paprika, onion powder, and Italian seasoning.
  6. Pour the garlic Parmesan sauce over the chicken just enough to cover it evenly.
  7. Place the seasoned chicken on top of the potatoes in the crockpot.
  8. Cook on low for about 360 minutes or until the potatoes are cooked to your liking.
  9. Stir everything well before topping it with shredded mozzarella cheese.
  10. Let it sit until the cheese is melted and bubbly.

Notes

For serving, pair with a simple side salad, steamed vegetables, or crusty bread to soak up the sauce. Leftovers can be stored in the fridge for up to 3 days.
