  • 1/2 cup whole milk ricotta
  • 1/2 cup grated or shredded parmesan cheese
  • 1 lemon (plus the zest)

Instructions

  1. In a large pot of boiling salted water, cook pasta until al dente, according to package directions — about 10 minutes. Stir frequently to ensure even cooking.
  2. Drain the pasta, reserving 1/2 cup of the pasta water.
  3. Add butter, ricotta cheese, Parmesan cheese, the juice of one lemon, and the lemon zest to the pot.
  4. Stir until combined, then reintroduce the reserved 1/2 cup of pasta water back into the pot.
  5. Stir until the sauce transforms into a creamy consistency that clings to the pasta.
  6. Garnish the top with shredded basil, serve, and enjoy!
